Tips For Making Chocolate Candy
1. Never get water into your chocolate. The two simply do not get along - if you get even the smallest drop of water into the chocolate it will turn it all grainy.2. If you want colored chocolate you need to start with white but n ever use food coloring to color it because this contains water. Instead buy the powdered colors made for coloring chocolate, or get the chocolate already colored at your crafts store. Also, add the color in small amounts and stir each amount in before adding more so you can be sure the get exactly the color you want.
3. Don’t wash your chocolate mold with soap because this will remove the stickiness from the mold. Simply use hot water and dry thoroughly. If you don’t try it properly you may find it difficult to get the chocolate to release from the mold the next time.
4. If you are finding that some of your older molds are not releasing the chocolate properly, try rubbing some vegetable oil onto the mold.
5. Making chocolate candy tips can save you a bit of money too because this tip is about just that! If you notice chocolate on the edges of the mold, scrape if off with a butter knife and set it aside to melt later on.
6. Add paraffin flakes to chocolate that is too thick to paint. Mix a little in at time until you get the right consistency.
7. After pouring your chocolate into the mold, put it right in the freezer then to remove the chocolate from the mold, just turn it over onto a tray. If it does not come out, tap the back gently (very gently or you might break your molded chocolate!). If that still doesn’t work run some hot water over the back of the mold.
